Yum, yum, yum. I don’t know about you, but I just think that peanut butter and chocolate are a match made in heaven. Today’s Trim & Healthy Tuesday recipe brings a recipe that delivers the marriage of these two delightful flavors with the added benefit of weight loss potential thanks to Trim Healthy Mama food philosophy.
Trim & Healthy Tuesday Recipe: Chocolate Peanut Butter Fudge (THM S Style)
Ingredients:
- 1/2 cup Peanut Butter (I used homemade, but just use whatever kind falls within THM guidelines)
- 1/3 cup Peanut Flour
- 1 tsp Stevia (this is our favorite one to date…and we love measuring it with these…aren’t they adorable!?!), to taste
- 1/8 tsp real salt, and pinch more if needed
- 1/2 tsp vanilla extract
- 1/2 scoop Protein Powder
- 1 1/2 tbsp cocoa powder
- 1/4 cup softened butter
Directions:
- Mix all ingredients together in small/medium bowl with hand mixer or stand mixer (I do not have a stand mixer, but my hand mixer worked just fine).
- Lay parchment paper in flat container and grease lightly with butter or oil.
- Pour fudge ingredients into container and spread out into creases and corners.
- Freeze for 1-2 hours until hardened through.
- Cut into bite-size pieces, or larger, and enjoy! **These must remain refrigerated/frozen for optimal hardness, or else they will soften quickly. Still delicious, but much more messy!**

YUMMY IN MY TUMMY!!!! I love that this uses butter instead of coconut oil. While I love coconut oil, sometimes a girl has to get her butter on. I <3 butter.
Thanks for linking at Trim Healthy Tuesday!
Totally agree! I could see this with an expeller pressed coconut oil, but not virgin…I don’t think the mix of peanut butter and coconut oil sounds quite as appetizing. Mmmmm peanut butter….
I just have to say THANK YOU!!!! I absolutely love fudge and your version definitely hits the spot!!
You’re very welcome! Glad you like it too =0)
Wonderful! I’m glad you love it too =0)
What could you use instead of peanut flour??
Peanut butter is GREAT! Almond butter would also work. Almond flour might work. And coconut shreds could work too. Coconut flour may call for a bit more liquid. Play around. I’m sure it’ll all be delicious
What size of pan?:)
Usually I just used a plastic container or rectangular container that I could freeze. Often they are about 12″x6″ or 6″x6″.
